Rapeseed glucosinolate itself has no biological activity. When people chew cruciferous vegetables or their extracts, the black mustard enzyme in the vegetables can hydrolyze some of the rapeseed glucosinolate into sulforaphane; the remaining rapeseed glucosinolate enters the human body and is hydrolyzed by intestinal bacteria such as Escherichia coli, Enterococcus faecalis, and Streptococcus salivarius, etc., into sulforaphane. Sulforaphane has antioxidant, detoxification, and anti-inflammatory effects, and can prevent and regulate factors that cause many chronic diseases.
